Three questions pop up about feeding an obese child in diet coaching presentations. How much water should a person drink per day? What exercises are good for your health? and What can I make for breakfast? One of the most enjoyed breakfasts is my recipe for:
Hot Breakfast Quinoa
Bring 2 cups of water to a boil in a 1-quart saucepan. Add 1 cup quinoa flakes, 1/4 teaspoon natural sea salt, 1 teaspoon cinnamon, 1 tablespoon butter and immediately reduce the heat to very low. Cover. Simmer for 5 minutes or until water is almost absorbed. Remove from the heat, allow to cool slightly before adding 2 teaspoons of pure vanilla extract. As it cools a bit the quinoa will thicken. Divide among 4 bowls. Sprinkle atop each serving 1 heaping teaspoon of ground flaxseed and drizzle each serving with a teaspoon of blackstrap molasses.
